The roaster can take a green bean from a specific country or countries and roast it a variety of ways. A coffee cupping allows you, the participant, to smell the fragrant ground beans, and then brew it.

By pouring hot water over the beans, a crust of beans will form. After breaking the crust that forms on top of the coffee, you smell and enjoy the coffee. Next, the crema is removed. This crema contains much of the gases of the coffee molecules which taste bitter.  Next, you will sip the coffee. The coffee temperature can impact the flavor on your tongue, so its great to be able to try tasting the coffees as it cools.
